Never bill off the clock Ever. Either they authorize your OT or you cannot do it. They still think you are only working 40 hrs bc you're not billing the OT.
Plan your day so you have it filled with 25 % of things already filled (from the day before) and 75% for ad-hoc projects that crop up during the day. If you cannot fit more in your authorized working hours then decline any new assignments, no matter how urgent, cc-ing the partner and saying when you can realistically get to it.
Then you will have ammo to say to them that you have more work than can be sorted in regular time. You will disappoint some people.
Remember, you are not Atlas. The fate of the firm does not rest on your shoulders. They need to staff properly or you should move to a firm that does not do this to you.

Ask your colleagues how they do it. Maybe that’s not the lifestyle for you. Or maybe you need to stand up for yourself and say I don’t have time. However, you’ll burn-out and hate your job shortly if you don’t figure it out. Or you loose aspects of your life and won’t be able to get them back.

Staffing is not your responsibility. You tell them you can’t get them what they need in the timeframe they need it. Sounds like they may need additional paralegals. Or else they are expecting you to work longer hours.
Do you have an assistant? I try to push admin tasks (organizing, etc.) to my assistant so I can focus on billable tasks. How many of your hours per day are billable vs. administrative?

I truly understand how you feel! I work for two Attorney's. One would think that's no big deal. However, it's just them and myself. In addition to Paralegal tasks, I also have to do legal assistant work, maintain the office, legal billing, accounts receivable, defense and claimant work, I.T. trouble shooting, etc. The list goes on. I have been working for them for 15 years. I am curious what others think my salary should be. Anyone care to give me some advice?
