Would you take an interview for a job that paid less just for practice? Company let me know that 80K was their max in NYC for data scientist role and I already make more than that as an analyst..

Yea you should do it for practice. DS interviews vary so much, some just ask SQL, some ask theoretical ML, some ask hardcore stats and some ask leetcode style algo questions.

Waste of time, any company paying that little isn't looking for talent and will mis-set your interview experience.

I’d do it for practice. Data scientist interviews can be very wide and it’s great to train (hah) on different interviews so you’ll be robust for a data scientist role you really want
