I would have a mature and direct conversation with the partner first. Rationally explain your concerns and draw a firm boundary stating that you're not comfortable with it.
If the partner doesn't respect that, then get HR involved and say you're not willing to travel, but are willing to work from home. At worst you get put on a different project.
Note, the partner may try to convince you otherwise. They'll probably list reasons why they think it's safe.
Listen to their concerns and demonstrate that you hear them, but do not cave in under the pressure. Trust your own decision making process and stand firm. Be your own best advocate, because nobody is going to stand up for your besides yourself.

Just share your family situation - kids who are unvaccinated, elderly or other people who are more susceptible (even with vaccine). Think most would understand.

Be aware we are back on the road next month so if you are on a project or account that expects travel you may need to roll off
