I love a good hash!! Shredded potatoes and add veggies of your choice (I go with peppers and onions)
Yes yes yes! Or frozen diced potatoes you can just throw in the pan for a little while with veggies - these are good
Shakshouka! Not traditional but my “cheat” way — some tomato/pasta sauce in the pan seasoned w cumin, paprika, cayenne. Then you can add whatever veggies or vegan sausage you want. Crack two eggs into the sauce and close the lid and let simmer until the eggs are cooked to your liking. Top with your choice of cheese (feta, goat, mozzarella). I love this recipe because when I’m in a rush I’ll just do sauce + eggs, but on the weekends I can make it as fancy as I want :) it’s super customizable ~

Try Labneh (you can find at whole foods) on toast, with cucumbers, Zaatar, cherry tomatoes, and a bit of olive oil.

If you’re okay with fake meat there’s vegan sausage that’s really good. Healthy is debatable though, depending on how you feel about fake meat.

Incorporate eggs (or egg whites)! Veggie omelets or scrambles are great and need little oil to cook (if that’s a concern). Scrambled eggs even come out well in the microwave if you want to cut out cooking oil. You can also combine eggs and egg whites together to get more volume.
0% fat Greek yoghurt with fruit (diced apple, grapes, raspberries) mixed in!

I like eggs with a more flavorful kick, like goat cheese, Russian dressing, pickled onions, or jalapeños. (It can be easier to incorporate new flavors in sandwich form, but you can probably figure out a carb-lite way to do it if you’re creative!)

Probably an obvious one.. but I make scrambled eggs with fresh thyme from my windows sill. And it’s seriously heavenly!
Focus on something with healthily fat, protein, and fiber. So like an egg scramble with spinach, topped with some avocado and hemp hearts

I do “spinach pancakes” - spinach, egg whites, a tbsp of oat flour if you want, in a blender and then cook it.
In my mind it tastes like spinach falafel + is great with coffee.
One of my new favorite breakfasts is a one egg omelet with Trader Joe’s soy chorizo, topped with salsa verde, pickled jalapeños, and cubed avocado! First you heat/brown the soy chorizo in a pan and then add the beaten egg, then once the omelet is done top with the rest :)
Have you tried buckwheat? It’s an obscure superfood loaded with vitamins and minerals, high protein and fiber, less fat than oats, the only grain that contains rutin, and it’s naturally gluten-free despite its misleading name in English. Only get it in roasted form though. It’s awesome. The green unroasted form is disgusting.
