Bought a bunch of Roma tomatoes at the farmers market, planning to make a fresh bolognese type sauce. Do I just chop them up and then cook them for a while? Include the skin or take off the skin? Purée them in my cuisinart? Any tips are appreciated. I am checking Dr. Google too but figured why not ask here too!

Here to make the dick comment that bolognese doesn’t include tomatoes. Just occasionally tomato paste.

Anyway - I would just chop them up and simmer them in. Sounds delicious.

Most would take the skins off first. They can be unpleasant in a long cooked sauce. When you search for a recipe, look for one that starts with fresh tomatoes. Also, bolognese is not traditionally a tomato heavy sauce, it’s very meat-centric. Good luck!

This is my favorite ☺️
If chopping and keeping skin, use immersion blender before adding meat. If you want more steps, boil and then ice bath the tomatoes, peel the skin, boil for hours with basil, pepper, salt, sautéed onion, etc, and then add meat.

Cavatappi in Roasted Red Pepper Cream Sauce

Tired of of the same old boring tomato marinara sauce? Try a roasted red pepper cream sauce!

Red bell peppers are roasted in the oven until sweet. It is then blended with caramelized onions, garlic, red pepper flakes, sun dried tomato paste, and cream into a silky, smooth and velvety sauce. Finish the sauce with a knob of butter and coat your pasta. Cavatappi works well here. Don’t forget to shave a little Pecorino Romano
