I use my CSR for all restaurants / fast food / meal delivery as well. I know you get the same % back with the Freedom Unlimited, but it’s just easier to use the CSR since you’re transferring back to it anyway.

Yup. And dining can go on any card since they're all 3x. Foreign transactions only on CSR. You should pool all 3 SUBs together too, since that would be a huge chunk of your points. The points from spending are much slower to accumulate. All points should go to the CSR/CSP and then to transfer partners like Hyatt or your choice of business class flights.
Another note would be that the 2 Freedom cards sometimes come with a 5x bonus on gas/groceries for a year (might need to use a referral link, not sure), which are the categories that are most notably missing from a Chase trifecta. You can also add Ink cards to the setup if you want.

Pro-tip, the 5x category in Q1 is currently groceries, so with the SUB it actually stacks to 9x (unfortunately it's not 10x like you'd think). I've been racking up 9x on groceries every week.
One thing to consider before downgrading is the additional credits from DoorDash and Instacart . Just those two alone are $240 / year. Travel insurance is great if you travel frequently. I have every year more than $1k in claims. Last year was in Newark during snow storm and had about $2k in expenses reimbursed
