How advanced are we talking? At the end of the year in AP Physics C, I teach my students how to use 4th order Runge-Kutta integration and simulate the launch of a model rocket, including changing mass and quadratic drag. Then they actually build their rockets and compare the launch to the simulation.
Look at what is offered by Science Olympiad, lots of great build projects.

I recommend checking out the National Science Teaching Association’s publication for high school teachers called The Science Teacher. Lots of great ideas there! Also try joining a physics teacher Facebook page. There is usually an AP group for each of the sciences.
