Ask for as much time as you want / need. I’d rather have you come in rested and ready to go vs burnt out and immediately planning to take a long vacay. You don’t get a lot of chances for a break like this in your career - make the most of it

In our group everyone has started at least a month after accepting their offer.

I got about a month, if you ask worst they can say is no. That being said my start date was in my offer letter. Not sure if you mean you want to go back and ask for more time.

I got about 5 weeks. Doesn’t hurt to ask, and if they like you (assuming they do since you have offer in hand), then they should give you the time you need, assuming it’s reasonable.
Just tell them your wrapping up your current projects and would like a couple of weeks to prep for the switch. Don’t need to overthink it, everybody in the field knows the demands
Offer expired/accepted last week and start date at the end of Nov

I got 2 months. Had travel plans already in place before I got the offer, they had no problem with it
