Hyatt hotels - specifically park Hyatt properties
This. I almost exclusively stay at Hyatt properties, most of the time on points. Have an trip in a few weeks and staying at the Park Hyatt in DC, Zürich, and Vienna - all on points.

Hyatt is the easiest and from the sound of it you're a beginner, so I'd stick with that for now.
Business class flights are more complicated and scoring more than 1 seat is even harder. Look into award travel subreddit and 10x travel course.

You can filter by chase points and find biz class to Europe for 2, like twice for 400k
Do you want to take a utilitarian approach and get the most trips out of your points?
Do you want to fly internationally in business class?
Do you want a pure maximized ROI per point and get a $15k first class seat?
Are you just booking for yourself
It rarely makes sense to book through the portal. Use seats.aero to search for business class flights.
In terms of “easy” its usually pretty simple to find USA -> Europe in business on aeroplan or united, for about 80-100k each way. especially from non-hub cities ( I was able to do this in the middle of the summer with a few days notice ) and on the plus side united lets you cancel for free and low on surcharges.
Then you have some more unicorn instances , like USA to South Africa or Australia on united for 120k or so each way in biz if it happens to be a non peak day or low flight load
