I haven’t done this buy spent some time pondering it as a thought exercise.
My instinct is that your skillset would be valuable to a select set of businesses that get sued a lot or are otherwise exposed to lots of legal claims - insurance companies, healthcare insurers, medical device and Pharma companies, large operators of hospitals and clinics, trucking and logistics companies, consumer products companies, utilities, and big retailers such as walmart and Costco. All have claims management teams that routinely deal with personal injury lawsuits. It seems to me that having someone from the “dark side” to evaluate and manage claims and lawsuits could be valuable.
Sorry that all I have to offer is intuition but maybe someone else with direct experience will chime in.

Insurance companies or companies with a lot of insurance defense would be your best bet. You have the experience of valuing a case and determining the best course of action. Managing outside counsel is essentially the same thing. Or you could be a trial attorney for an insurance carrier. You’d get to litigate without worrying about billing.
