What do you do? You look for a new job.
Leave. There is always room for "more" work. Don't keep chasing their moving goal - it's not worth your mental health.
Pro
Start looking for a new place because you don’t want to be at a place where there is the bait and switch.

Was originally told 150-160. Then minimum 167. Then 180. Then 200. And yes, as I hit each tier, it was revealed to me that “actually we expect more and you’re underperforming.”
I'm hearing "well the initial number is ok if you only care about doing the bare minimum - if you want to succeed here and demonstrate that you're partner material, you're going to have to do more." (He would not clarify what "more" means.)
I'd just do the minimum or slightly more. Say they require, or expect 1800, I would not do more than 1900 at all, and even then I'd probs sit pretty and be fine around 1850.
