Find people who have strengths that complement yours. Shouldering the responsibilities on a few vs. just you will keep everyone in a more balanced committment
Be clear about what it is you all need/want/can accomplish. I was part of a group run by an HR rep at my company which first started off as a safe space to talk/chat but when we decided to start an association outside of work (a professional one) it was shot down by HR leadership. It really zapped our energy and disbanded the whole drive, unfortunately.
You have to first set a clear and realistic goal. What do you want to achieve with your DEI committee? Increase diversity in your workplace? Create a better culture for everyone? Address unconscious bias?
Agreed with research scientists. Define the goals of the committee. This will help you then define the roles that you need members of the committee to fill.
If you get a bunch of volunteers together with no goals and no roles, it will become a "too many Cooks in the kitchen" situation and quickly loose engagement
