Me, an empath, sensing we have the same issue
If it's easy to absorb other people's moods maybe trying watching a quick YouTube video or reading something short that's up beat and positive.
Mirroring emotions is important in some situations but you might want to try breaking the habit if it's causing you lots of issues :(
I generally call someone I really like quickly to hear about them, and say that they are special to me. It sends good vibes for them and for me. Sometimes my mother, my grandmother, or my sibling.

I’ll also clarify, by silly I do not mean ashamed of.
Sometimes finding out how someone’s day is going helps. If I figure out why they are frustrated then I can point to something that’s happening to THEM and not ME.

When people ask how i’m doing at the start of calls, barring any actively negative information / something like that, i reply with pretty aggressively positive terms like “splendid” and “delightful” and I find it usually leads to people wanting to return with a positive or giving a light chuckle. (Internal, usually external i will be a tad more professional)

i mean this with kindness — go to therapy. imo, absorbing peoples moods and hyper awareness of their negativity is potentially a trauma response from childhood. if i were you I’d ask myself — is this something i do in other contexts (family, friends, romantic relationships)? and how long has this been a problem for me?
or i could be totally off base and this is just based on a toxic work culture at your company or team, or something else entirely. not everything needs to be pathologized either.
