Camping does it for me these days, so I can unwind and get away from the stress of it all.
^ I second this suggestion! Any time I’m burnt out I need to go outside and get absorbed in nature - go to the beach, go to a park with tall trees and lay down for a while, anything that makes you feel small and very human can help wash your brain of corporate stress.

It’s kind of tricky to alleviate burnout symptoms in a short span. In your week off, get physical and mental rest. Hydrate well, sleep without an alarm clock if you can, and consistently remind yourself to be kind to yourself. That latter part should help a little bit in the start of a new position.
When you do start, focus on the people, socialize as much as you can with your coworkers in zoom/hangout sessions intended as a “get to know you.” The hardest part about onboarding and being onboarded during the pandemic is the lack of those more casual interactions reserved for the kitchen or between conference rooms.
And on a final note, take care of yourself! Rooting for you.
Get a therapist
Exercise, sleep, read. Get away from a phone and your computer. Hang out with friends.
Figure out what makes you feel recharged, and do as much of that as possible.
Exercise? Swimming? Netflix and naps? Hiking? Reading?... It's different for everyone. Find yours and do it. A lot.
This week off may also be a good time to incorporate a new routine, like walking or exercising in the morning, before you start the new job and help avoid burnout going forward.
I agree with the comment about less technology. Would recommend what makes you happy, but hopefully with a reset in mind. I live in DC so typically use short recharging times to visit parks in Virginia. Getting back to nature is so soothing and helps put work in perspective.
