The new company I’m at now sent me an email from an email address that was HR@companyName.careers saying I was accepted for the position. They gave me paperwork to fill out and sign to accept the position
I fill out the paperwork and send it back to them and it goes through… then a few days later I go back to the email to say something else and I get this…?

I think it would be decent of you to give them time to hire and you train the new guy. If you're going to a competitor though, you may be let go immediately.

It isn't "professional" to give your team the courtesy of having more time to replace you, because it's their fault for having such a thin operating model that something could happen to you and they would lose their only accountant. In this economy, especially with layoffs in the air, I'd wait until 2 weeks before start date to give your two weeks'.
