OOOH that sounds and looks really good OP. I don't have a rice cooker but have been thinking about getting one. I guess I didn't realize you could cook other things in it besides rice. I should have looked for one on Prime day! I love cooking my rice in chicken stock, it makes it so much more flavorful.

Love it! This looks yummy and healthy!! I love to cook my rice in broth, I do bone broth so there's some extra protein in there. And I looove cucumber. Have you ever made a cucumber avocado sesame salad? It's a delicious vinegary salad that I think would pair really well with the rest of your meal.

Wow! That does look amazing! And the recipe adjustments sound pretty good actually. I have been debating getting a rice cooker but they do look handy! This dish looks tasty and not too heavy! I hope it tasted as good as it looked!
I think the ginger would have elevated the dish even more so!!

Another good way to cook chicken in a rice cooker, try using dark chicken meat, cut into bite size pieces, marinate with soy, sugar, some rice wine, oyster sauce, ginger, scallions, sesame oil, and cornstarch. Let it marinate for a day. Cook the rice in a rice cooker, put the chicken in when the rice is 50-75% done. The chicken and rice will be delicious.
