Got a random email from a supposed Amazon recruiter for a SDE position (which is not at all a fit). The email is amazon.com domain and there are no red flags in the body but it doesn't feel like an Amazon recruiter due to the tacky signature, etc. Has anyone seen this kind of cold-calling from FAANG recruiter?

Just rewrite that experience to support what you do now. What soft skills did you develop that you still use. Leading people? Did you develop any analytical skills that carry over. Folks in the military have people that help them translate what they did in the military to the business world for example. You just need to translate it
Imo, it’s ok to leave out things in your resume as long as it doesn’t create a glaring gap that will attract attention. But people might be more understanding than you might think of changes in interest. It’s normal for people to refine and change career interests over time
Don't leave out the other experience. However, don't give it tons of space, and focus on transferable or impressive skills. Maybe you want to do consulting, and chemical engineering sounds irrelevant, but there is more overlap than you think. Consultants appreciate the value of rigorous problem solving, careful analysis, aligning on roles/responsibilities and communicating technical results to non-technical managers/stakeholders.
