I recently changed jobs and my new 401K provider - Principal has very limited MF investment options. My prior employer’s 401K was managed by Fidelity and provided me access to a range of MF options. I believe that the fund options are negotiated by the employer and provider? Two questions. First - I have not rolled over my previous 401K to the new one. Would there be any problems. Second - is there a way I could move my current 401K to another (precious) provider?

You can’t move your current 401k to a new provider. You old 401k can be left at old employer if allowed, rolled to new plan or rolled into an Ira. Is your old 401k Roth or traditional? If Roth, roll it to an IRA. If traditional, an Ira is fine as long as you don’t now or plan to use a backdoor Roth IRA.

That’s a good idea - but in the meantime I’ve been doing Mega Backdoor in after-tax contributions converted to Roth, so I don’t feel I’ve been missing out for an extra $6k in Roth.

Hard to say, but limited options may be a reason to keep your old one where it is, or roll to an IRA (understanding you could have to do pro-rata in the future for backdoor Roth IRA contributions). Doing an in-service withdrawl to get your funds out of principal to an IRA isn’t very common, I don’t think.
