EB1C is current for Indians too. So if you are born in India and hold a masters degree in the US, you have to wait for estimates 80+ years but if you worked as manager outside the US for an year or more, you deserve a green card. Dumb system

The new firm will have to apply for a H1b and that could be time consuming

Get EY to file your H1B or start the GC process. For the latter, once you have an approved I140 you're good to go. Of course if you're chargeable to India you won't actually get your GC unless things dramatically change
Yes you’re right. You need I-485 to be processed for EAD. And you need to wait for 6 months before you can jump companies. But if you are “born”(NOT citizen) anywhere other than India or China, you are privileged. You can apply for I140 in premium and I485 at the same time. When I140 is approved within 20 days you can start EAD processing.
