If you’re a contractor it won’t be a surprise at all.

Tell them you've enjoyed working with them and sad to leave (if that's true), then say you've gotten a life changing opportunity at xyz. (60% is life changing even if it can avoid lifestyle inflation and save it all).
When companies want to get rid if you they won’t hesitate. Also, if your current company wanted to keep you they would or should have made you an offer already. The only thing you need to do is send an email communicating your two weeks notice. You don’t even need to explain yourself. Simple as that.
You’ll have to leave the company on very good terms to leave the door opened in the future.
I would suggest to schedule a meeting with your lead and tell him the news face to face.
You could explain the whys and thank him for the time he invested to train you and tell him that you appreciated working with him and the team.
After that you could talk to your staffing agency and give them your resignation letter.
What ever you do, don’t share the news by email lol.
You don't HAVE to leave the company on good terms, but it helps.
Whatever industry you are in is smaller than you think and while you may not be back to this company, the people that work there may move on to your *next* company - and *that* is where you want to be on good terms.
There are two times and two times only that you can burn every bridge, and that is on your retirement and your deathbed. You'd better be financially certain you aren't coming back from retirement to burn those bridges either.
Tell the staffing agency and they will communicate the details with the appropriate parties. You’re a contractor so they probably won’t be surprised
You’ll be fine. When you communicate, just stick to the facts, when you’re leaving, last day, steps you’ll take to leave your projects in an okay place. Say some kind words but no need to go overboard. It always comes as a shock but it happens and they will figure it out.
You’re not the first or last person to leave a job, so don’t worry too much. Congrats on new role!

Also is it ok to give a one week notice instead of two weeks? I've got some things to take care of before starting the new role, and I'm at-will so technically not required to give any notice, but would one week burn bridges?

Just did this on Monday. Gave 2 weeks to the recruiting company. Company I’m hired out to hasn’t said a word yet…
