It really depends on the studio and the product. Are the hours grueling for some? Yes. Is the pay lousy for others? Sure. You just have to be targeted about where you end up. My advice would be to pick a few you're interested in and then try connecting with some folks who work there for specific feedback. Good luck!
There are definitely pros and cons to working with a AAA studio. You'll have a high set of standards to meet, along with an extensive list of criteria your work has to meet, but overall the projects are fun to work on and the people are great to work with. Smaller companies and indie developers have more control over the game they produce, but typically don't have a large budget, so development often takes longer. So the biggest thing you want to think about is: How many people can you comfortably work with on one project at a time?
I’ve worked with games (and had a lot of fun) before and in my opinion there only 3 companies I’d work with games now: Google, Oculus (Meta), Microsoft - because these are tech companies that are in the gaming industry.
I interview for several big AAA studios and the compensation is low. Unless you get a Director Position.

The only real difference is the size of the team and maybe the scope of the game and timeline. Everything will be bigger or longer in a AAA studio as compared to a small budget studio. Nothing to worry about but there are pros and cons to working in a small studio and a company like Bethesda for example.
AAA studios can be awesome places to work at. You'll learn a lot, you'll meet some awesome people, and you'll end up with some great stuff for your portfolio. The work can be demanding and they have high standards and work fast. If it's what you want, don't be afraid to go after it.
