She probably drank too much coffee
Maybe she was just nervous to be infront of clients
It might be that she gets nervous when it comes to public speaking, or in taking the active client facing role and she didn’t know what to expect. Assuming, as an analyst, she may be new / has not had much prior experience. Was there any prep before the call?
I was the one practicing the pitch, lol. She was just providing the feedback.
If you noticed these things, you were probably watching her fairly intently. I'm assuming no one else was providing feedback so she was getting all your attention? That makes most people nervous, and is probably all that it is.

Sounds like anxiety
I’ve been in a similar situation when I was new to the firm and there was so much jargon that was new to me used in a pitch that I was terrified to ask questions because the terminology was glossed over as if they were table stakes. It essentially gave me the feeling of imposter syndrome and made me question whether those were things I should have already known so I wanted to wait until after the session to look them up
Probably anxiety as someone who deals with it as well. It can be hard.
