See if you could pick up some discrete one-shot assignments, like covering a court appearance or minor deposition for someone who is busy. You’ll get a quick hours boost without long-term responsibility on top of your other matters.
Attend property inspections - see if you can schedule some on weekends.
Depositions! Between the prep and sitting through them (so nice to attend ones I don’t have to conduct), that catches me up. Otherwise, reviewing disclosures, drafting status updates for clients, written discovery…I’m right there with you!
Aside from what has already been mentioned:
-motions to compel discovery (preparation and appearing at the hearing)
-preparation of case evaluations
-meet with clients in person to finalize discovery responses and collect document production
-review deposition transcripts to determine support for dispositive motions
-preparation of supplemental discovery requests
-preparation of pre-mediation report for mediator
-review claim files that come in and prepare a summary
Don’t forget to write update letters to allll of the clients, not just the adjusters on file. If you haven’t updated a named employee, driver, business owner, etc. in a while, you can probably get away with doing a lengthy update.
