I have 6 YOE in. Net+Angular and got an offer from Legato Health Technologies with 20 LPA Fixed, i joined Infor just 11 months ago with 12LPA Fixed and i will get the hike in August. If i resign now i will not get hike and i am a critical resource in the project, i guess Infor might try to retain me by matching offer. What should i do? Should i resign ASAP and not negotiate with Infor . I have all these doubts because Infor is a product based company.

Find a new project that'll take you and the cliche "aligned with my interests" shit and pray it works.
I knew an analyst who scheduled a meeting with their SM and M and told them she was rolling off. And she had done them a favor by staying longer than 6 months. Needless to say she doesn't work in consulting anymore ... So maybe just be careful
a1 has a point. That would be burning bridges.
I never understand when my friends tell me. "Just get off that nasty project". It's a risky move, and needs to be calculated move
D2 -correct you need a strategy
...but if you don't care about buying bridges you can always just walk out the door. The only thing a company has on you is pay/benefits and maybe your reputation. If you are headed to another field, even the reputation may not work.
Have your counselor behind you. They can help with the thought convos
Maybe the more important question is how long is your role for. If it's just a couple more months then ride it out we all get out in crappy situations. If it's a year then maybe start discussing with your CC about needing different opportunities for growth
