Those probably will do nothing for your career. View them as expensive hobbies… where when finished you will likely be back in a rut. So my suggestion is to get a hobby that scratches the itch and could actually be part of a long term solution for you.
Couple of thoughts.
If you want to learn more and don’t need the qualification, you can invest into either a distance only somewhat inexpensive MBA (like UMass) or a certificate in a field like AI/ML/data science. The latter might be useful career wise. The former just might be interesting plus round out what you have picked up along the way and be maybe less than 20% of the cost of an EMBA.
Another idea is to add adjunct teaching, either online or locally. This can be quite rewarding and also shore up your knowledge in what you teach. It’s less about pure intellectual fulfillment and more about learning to teach and mentor in a different setting. It might scratch the itch for you.
With you on the intellectual rut piece OP. I’ve been in one it seems for the past 18 months.
Maybe first try a book club? They have ones that do nonfiction
