Ritz-Carlton Bachelor Gulch in the mountains is absolutely gorgeous. Probably farther than you want to drive but regardless of seasonality, it’s impeccable.

Go to Red Rocks. You can tour during the day even if you don’t want to go to a show.
In Denver itself I’d recommend staying Cherry Creek. Marriott has a number of luxury properties there. The JW is nice. All within walking distance of great restaurants and shopping.
Recommendation to do:
Catch a Rockies game - the stadium is beautiful especially for sunsets.
Concert at Red Rocks (mentioned earlier)
Plan or sign up for a brewery tour
Hike, Mtn Bike or horseback rides
Hot air balloon ride - beautiful views of the Rockies.
Hapa sushi is the best sushi I’ve ever had

If you want a more of a city vibe - Fort Collins is awesome. Marriott has an Autograph Collection hotel there - The Elizabeth. It’s truly a great property, casually upscale, and the hotel is music themed. There are record players in every room, a vinyl library you can borrow from while you’re there, small music venue in the lobby that has live music most nights, and a very intimate and almost hidden cocktail lounge on the roof with views of the mountains. When we were there the lounge had dueling pianos. Fort Collins is also just a fun city - couple major breweries, great food, lots to do.
