EY is more on the side of project management and process improvement in SaaS, as told. While there is hands-on in other two.
If I don't consider pay, which company is the best to go for considering work and culture(peope friendly).

I mean...it's the point of work? Lol? I think it's better to get more work in the early stage of your career vs later on when you're more likely to get fatigued easier
Depends on quality or quantity. Personally if I’m learning and getting quality work, i would be very happy.
