What documents do I need for the skilled worker visa application applying from the US? What is the current processing timeline?

I am in my final interview for a product manager role. I am currently a senior product manager at Amazon. The only role that they had available at this company was product manager. Someone I know is joining as a senior product manager with less experience than me. What's the best way to address this?

Biz owners/entrepreneurs: Any tips on how to answer questions where the interviewer would want to know why I’d want to work for a company if I have my own. I’d want to reassure them that I have no intentions of leaving their company for mine or that there wouldn’t be competing priorities between us. I have a small photography biz. Vendors keep on asking to join on W2 rather that Corp to Corp although for employees on H1B we cannot join on W2 due to immigration issues.
