In my experience Mining Engineers have the most opportunity given the lack of individuals joining the sector. In terms of travel, you can go anywhere in the world.
For sure, the more specialized your area of expertise, the more opportunities you will have to travel. Which is really a double-edged sword. Wastewater management isn't really a glorious job but it's not something everyone can do, so my job gives me a fair amount of travel
I’ve seen vehicle controls / firmware engineers do some traveling to some far out places (New Zealand, Alaska, Death Valley)
Anyone in quality and reliability travels a fair bit for supplier audits.
Those are definitely some out-of-the-way locales, I've rarely been outside of the US and Canada. I suppose it's really a matter of which company you are working for. Most of our operations are fairly centralized in Minnesota
I would say Aeronautical engineering and the other advantage it has is that there is demand for these engineers.
If you're working as an engineer, something like an aeronautical engineer due to the fact that you will be working with planes. If you do end up going with this career path, best of luck, I really enjoy it here!
Consider roles you can do completely remote so you can be location independent and live where you'd like.
Anything that is highly specialized would be your best bet. Most companies have engineers but don't specifically have a Pyrotechnics Engineer, for example, so they would just hire one for a short-term consulting project. Don't be afraid to see what else is out there. My wife travels a lot for work and she is constantly taking on new mini-projects that require her expertise onsite for a few weeks here and there
Getting into construction of chemical plants leads to a lot of travel all around the world. It is generally medium term though, with stays of many months or a year or two. Good for a single person but horrible if you have family!
Engineering sales of specialised equipment such as catalyst means you can travel all around the world with short term visits to customers chemical plants.
Supplier quality engineers travel a lot, applications and sales engineers, field service engineers. Or like someone said look for some fully remote work and do your own thing. In my experience in the mechanical field, a lot of times the places you do travel aren't often places you want to travel. Cleveland Ohio or hours outside of Pittsburgh in the winter aren't ideal places to visit.
