First, write bullets on all your big accomplishments/projects. It will be a longer list than can fit on your resume- that's great for now.
Give it a day, then come back and edit them all so the language is crisp and impact is clear.
Then, for each job, consider which experiences are most relevant based on the job description and anything else you know about the role and company. Then, pick the subset of your bullets that best highlight those relevant skills and experiences.
It also helps to separately think big picture on what you uniquely bring to the table from a skills and experience POV, then make sure your unique story jumps out from the resume. Might be "I've worked on a variety of projects but the common thread is that I'm always bringing the quantitative lens across these. Here are a few examples of how that has driven great results for my teams...". However you want to position yourself, make sure it's an easy story for someone you've never met to digest, which means it'll be an oversimplification. Even if you feel like a generalist, try to pick a couple things about you that make you unique and weave that into how you've impacted a variety of industries and functions.
