Graphic design has been the subject of memes/mockery for years because it is poorly paid; however, I believe that with the right skills and in the right place you can make a living at it.
I know many graphic designers (myself included) who migrated to UI Design, then UX and finally Product Design. There is a lot of demand for these roles nowadays.
Regarding your question; it is true that there are more and more bootcamps, courses and therefore more profiles entering the market every year; but working as a junior is not the same as working as a senior, if you specialise, grow and don't stop learning; I doubt you will have problems in the future. The secret is to keep training while gaining years of experience. You can also start to specialise and gain experience in a specific sector, for example "travel" "banking" etc.
Also UX design is a lot more than “making the best design”. Our job is about facilitation, synthesis, validation, advocating for users needs, leading all stakeholders to a shared understanding of the problem and then selling them on the solution.
