Anything > 5 rounds, any project that takes more than maybe 2 hours to complete. That said, I have the luxury of being employed and mostly happy with my job. If I was unemployed or desperate to make a change, I'd be willing to put up with a lot more corporate BS.
Several interview rounds are just something I’m putting up with. The assessments and assignments are where I draw the line. 1 hour is my cutoff. If they can’t see my skills in that timeframe, I can’t give any more of my time for free.
No more than two rounds and no “work”, those are my rules.

I usually assess the time investment versus the likelihood of a serious opportunity. Multiple rounds are normal, but extensive assignments without compensation can signal imbalance.
