No but seriously, stay in Dublin briefly to get over jet lag, the Viking tour is fun (like a duck tour) and the Guinness brewery tour, Trinity university and Temple Bar, there is a Westin in good location. If driving south, glendalough lake and mountain area in Wicklow is worth a visit.
Spend some time in Cork, blarney castle, maybe kiss the stone, Kinsale, maybe the old English market and of course the Jameson distillery in Middleton.
Go to Kerry too, Killarney has plenty going on, Torc waterfall if it's not too bad weather. The ring of Kerry drive through Kenmare, Waterville, Glenbeigh, Killorglin all around is great.. Or Dingle is also a good option. Do you golf?
Galway should be a stop too, fun city and from there you can drive to see the cliffs of moher which if possible aim for a dry day since so scenic. The burren is supposed to be pretty spectacular too if time permits.
You can loop back to Dublin then and do whatever you didn't have time for above, Dublin Castle is probably a good point of interest too.
If you have car rented you don't need to plan out much accommodation as everywhere has bed and breakfasts. Since driving on the left is likely new to you, requesting an automatic will help with the overall adjustment. Don't even consider more than one single drink before driving, our laws are very strict and roads are narrow/windey. There is uber in Dublin only, halo is a similar taxi app. Most towns you can walk to your nearest pub. Enjoy :)

Rent a car and drive
Try Kinsale and Doolin, Galway, Aran Islands, Dingle Peninsula, was told Bunratty was worth the time, haven't been North, but hear Belfast is also beautiful
Def check out Doolin and do the walking tour with Pat, it's a mildly difficult hike/walk but you'll get the best views of the cliffs. Pat also has a B&B in the area of you need a place to stay. I'd recommend doing B&B's instead of hotels. Donegal is also another area I'd check out if you have time but like A3 would recommend heading south first then looping around.
I have to laugh, although googling pat walking tour Doolin yields the perfect results about Pat Sweeney, I still find it hilarious that just referring to Pat actually works considering the hundreds of thousands of Pats all over Ireland.
Haha A3 fair point, probably should have mentioned the last name but the guy basically built the walking path all on his own, part of it being his back yard. Anyways easy enough to find him on Google as you proved already 😉
