The Remarkable 2 tablet. Someone at my firm has used it since the original version. She loves it. I’ve toyed with buying it but I’m too apathetic and don’t want to hassle with the process of synching my notes on PDFs in Remarkable to my firm’s iManage folders
I have a Remarkable2 and love it - when I use it, which is like all of the other IT tools available but underused. It's very tactile and actually feels like writing on paper. Remarkable is excellent for taking call and meeting notes, uploading to PDF and then sending them to DMS. I could do that with paper, but - who does that, really? If you can be disciplined about it, send to your admin and have them manually upload, along with time notes if yours are legible.
25 year appellate attorney here. I remember everything. No need to write anything down. (What was the question?).
iPad Pro, 12.9 with Apple Pencil. Microsoft suite is helpful, as is Goodnotes. Get Paperlike as a screen protector to give you the feeling of writing on paper, if that's important to you. Multitasking function is great since it can split the screen if you need it.
Remarkable 2 is nice, but only if you write and not do much else.
I use a Microsoft Surface with One Note. You can use the snipping app from Microsoft to take clips from cases and paste them in, then use the stylus to write notes on them. Plus it is a full on laptop if I need it to remote in to my work computer.

You could do this with literally an iPad (and Apple Pencil) and PDFs. There may be more sophisticated or elegant solutions, and I’m sure there are cheaper ones as well.
But I think tactile things aid memory (at least for me), so I too prefer to print out and take notes. I don’t think it’s that horrendous. Just get recycled paper, recycle the paper when you’re done, and make binders of the cases so you generally only need to print them once each. And of course try not to print ones you won’t actually keep around and use.

I represent a lot of tree farmers. The supply of trees is way more than the current demand. Print away.
iPad with PDFs and you can write in the margins with the iPencil. On my computer I use PDFs and insert comments in the PDF. If you set the color of your comments to red then it is really easy at the end to scroll through to review all of your comments and then summarize everything before you close out.
I have to print everything out. But when I was clerking, we had a directive to be “paper conscientious,” so I got used to printing cases and briefs 2-pages per side. Cuts down on a ton of paper, if you can handle reading the smaller text. (I’m sure I will reach a point in my career when my eyes don’t allow me to do this, but it works for now!)
