San Jose del Cabo…not the “actual” Cabo. I just checked 5 random days from SFO-SJD in January. Flights are around $200-250. There are also several oceanfront properties with condos for rent. One without a view is $53 a night. You’re within walking distance to restaurants, bars, art district, beach, etc.
I did this trip a few years back. I was there for 8 days and I think all in (coffees every morning, big lunches/dinners), I was under $900.

Go to Chiapas and stay in a little Airbnb in San Cristobal de las casas, see Palenque, go to waterfalls, sumidero canyon. Hang out by the beach and go surfing in San Juan del Sur. You can go to Lake Atitlan and stay at the Yoga Forest for under $500 a week. There is so much to do at the lake!
Was in Chiapas earlier this year - San Cristo was awesome!! I’ll have to check out the lake next time
Playa Del Carmen. Get the cheapest flight you can into CUN and take the ADO bus from the airport to Playa. There are plenty of hotels and condos on AirBnB that are comfy for $50-90 per night. Eat street food or at reasonably priced restaurants. Walk 5th Avenue, beach, pool, take the colectivo to the ruins in Tulum and to a cenote along the highway.
