Coffee after 2pm messes with my sleep, and caffeinated tea after 3 does too.
I now start with 2-3 cups of coffee when I wake up, then 9am-2pm is my tea-only zone, 3-10pm is non-caffeinated beverages only - mint tea, coconut water, etc.
I like having a beverage for the ritual - there's something about that that helps anchor me to a task. However the caffeine hits have unpredictable effects on my day overall, especially when they disrupt sleep. The time blocks have helped me wrangle that wild card.
I find that caffeine has almost the opposite effect on me as it does for neurotypical people. Makes me sleepy and unfocused. So I have one serving in the morning with breakfast and then try to avoid. Honestly, what helps me focus more and feel better, higher energy… you’re gonna hate it… is water. It’s SO hard for me to drink the right amount of water in a day but when I do I feel amazing!
Sounds like you know what your strategy needs to be, just drink one cup instead of multiple.
If the issue is that it's a habit to refill your cup or keep drinking on something, after the first cup switch to a lower caffeine drink like green tea or even zero caffeine drinks like sparkling water, herbal tea, or good ole normal water.

I can't really do coffee, not for multiple days in a row, at least for various reasons. I prefer tea, especially because it has l-theanine in it which helps create a sense of calm. You can also supplement with l-theanine if you don't want to give up coffee. Many people find they need to have them both together.
So for me I drink a giant mug of black tea chai in the morning (an hour-an hour and a half after waking to let the adenosine clear away from the receptors as this should help eliminate afternoon crashes). Then I might be up for a second cup of black tea, but often green tea or matcha tends to do better for me throughout the day till the early afternoon.
Stick to one cup of strong coffee. Switch to hot black tea after that. Much less caffeine but still a cup of warm, “feel good” experience. And you’d benefit from the health benefits tea drinkers enjoy.
Have a large cup of coffee in the morning and then switch to decaf or other beverages
