How many PTO/Vacation days do you usually take off a year if your employer offers unlimited PTO/Vacation days?

I just started a new job and this is the first time I’ve ran into this. It sounds nice but at the same time I hate the lack of direction. Help!

A parent of one of my students told admin she thinks it's irresponsible that I won't be grading over Christmas break. I let the students know to get any work they need graded in before the break and I'll get it to it during our workdays in January. Apparently that's not fast enough for her 🙄. How does one tell their boss (owner of the company) that you are burnt out? The sheer volume of work is exhausting and I haven’t taken a true vacation as we are a small company so if something urgent comes to my email I feel like I must respond. I was given an additional title and more responsibilities last year as well but only a 3% raise for it.
