If you’re getting interviews (especially from well known companies) then I don’t think resume is an issue. The problem is probably that you aren’t selling yourself properly.
Suggestion would be to ask what they are looking for then tie it with your experience. Leadership experience is even better if you can show case that. Just keep in mind that you qualify to work in the role but you are being compared to other candidates who also qualify and it ultimately comes down to who has the ability to outsmart their competition to get the offer.

On that note, maybe a few sessions with a coach who can help you tighten up would be a good investment?
No offense, but if you thought it was a good idea to quit consulting 2 months ago with nothing lined up, you were (and likely still are) uninformed about the state of the job market, and possibly how to interview well. I'd enlist the help of an interview prep coach.

Who was your previous employer? Tbh it also just doesn’t look good to not be employed while applying. Like what’s your employer going to think if they know there weren’t layoffs at your previous employer? “Oh they were stressed and quit without anything lined up?”
