I a just did mine in Guatemala and there was no waiting time, booked in early Feb. got it in a week time. So it was pretty smooth.
Great for O1 renews, but at the moment they are only booking appointments for Portuguese nationals due to covid visa backlog.

Try Paris, only 12 days.
The problem is that they keep the passport and send it a few days later. I have no one in Paris, and the address has to be given when you make the appointment. Also, staying in Paris for more than a week without a flight would be terribly expensive, right?

Lisbon 3 days. Call them and ask if they accept 3rd country nationals. Also, call Madrid and ask if you can do a mail-in. If it’s a renewal, it’s often possible.

If you do go Lisbon, request that they move your profile to Portugal to help streamline everything. If you don’t have a profile, all good, create one from scratch for the Lisbon consulate.

When you fill out a DS-160 (online non-immigrant visa application) you’ll fill out who you are, that profile gets kept. After that’s done, you can then make an appointment for a consular visit.

Meant another embassy, not not going to the US
I currently live in London, but my lawyers told me it's not a great one. A history of being over strict and messing up different types of visas. I'm a bit scared of getting an appoint here that will also take a long time to fail the interview
I don't know if this is necessarily true. I made a similar transition pre-COVID and I had a pretty smooth transition. I also am married to a Portuguese native so that might have helped.
