I had interviewed for an internship position at EY for technology consultant program for summer 2022 and got a call where they extended an offer. I wanted to know if I can defer the internship offer to fall 2022 or a later start date after summer.

Does the company value your previous tenure at Google, or do they treat you like any external candidate who never worked at Google before?

They can take forever, especially if the job was just posted. If it doesn't say not moving forward, you're fine.
I have only applied for non-technical roles, so I can speak to that. For me it went App > Assessment > Recruiter > Hiring Manager > Second Round (Googleyness/Leadership/Role Knowledge). It’s my understanding it goes to a hiring committee after this for full approval. The first time I applied, I applied in late January, did most of my interviews in April, got rejected in July. The second time I applied, I applied in late October, doing second round interviews now in December.
