Try something like: “How does your team approach focus and boundaries, especially during high-pressure cycles?” It invites them to talk about norms without sounding like you’re trying to opt out of effort. Framing around sustainability or clarity is key.
Good question, I had mixed experiences in the past, sometimes people care about letting you know their ways of working without you even asking, for example once I got told by the manager that in his team everyone worked after 6 pm and if I was comfortable doing it (lol). What worked for me in the past is asking about how the team works, this usually indirectly covers that part and shows interest on the role more than on w/l balance.

I usually ask something like: “What do people on your team do when they log off?” or “How does the team handle crunch periods?” It gives you culture insight without sounding like you’re clock-watching.
Correct answer: you don't ask it during the interview, but during coffee chats
When do you do coffee chats?
