Do NOT bring up the fact you are a single mom until you have accepted and signed an offer. I never brought up the fact that I had a young child or that I was a single mom until I was hired. Then I dealt with the issues as they arose. If you can’t find a job that offers flexibility, then make sure to ask questions about the culture around PTO and family emergencies. Even though it’s illegal to ask about kids or family situations, people do discriminate against mothers, unfortunately, especially single mothers, and it’s really hard to prove. I was sympathetic to my team members who had children and needed extra time off, but I can’t tell you how many times I heard loud grumbling from those who didn’t have kids about people taking “extra time off” even though we all had the same unlimited PTO policy, they could take the same amount to time off, and I never asked anyone why they needed time off or even required them to ask for permission (just inform me and make sure work is covered). It’s just stupid that people hold having kids against women, but it’s a reality and you need to make sure you’re in an open and accepting job situation before you reveal personal issues.
