I had interviewed for an internship position at EY for technology consultant program for summer 2022 and got a call where they extended an offer. I wanted to know if I can defer the internship offer to fall 2022 or a later start date after summer.

Take the money. I work at a midlaw firm, and an associate left in less than a year to go to BL and then came back when they hated the new BL job. If you’ve been doing good/decent work at your firm, it’s probably fine, and anyone would understand a lateral move to BL

It won’t hurt your resume or reputation. But carefully consider the WLB issue. If you’re at a point in life where you can sacrifice WLB to an extent to get to a practice area you want plus more money, that may make sense. But if losing WLB will require you to miss out on parts of life you value (e.g., family) maybe hold out for a different opportunity for a change. $ isn’t everything, but you’re also talking practice area fit, which weighs a bit heavier at this stage of your career. Best wishes with your decision and landing on what makes most sense for you. And yay that you have great options from which to choose.
Take it. Going from midlaw to biglaw is always understood. You also don't like where you're at. Do well at BL and no one will ever ask about where you before
