Consulting-> PM is a piece of cake, especially from a name brand like that.
FinTech startups are a dime a dozen and many fail. Unless you 'know for a fact' that this will be the next big thing, it's not worth the risk.
I'd even pick Big4 > startup, so McKinsey is a no brainer for me.

Ya. I went Big 4 > PM at fintech startup > PM at established non-faang company.
Never took a single class or course or anything for PM. Consulting is generally sufficient experience for interviewing, if you have the right exposure and align it in the interview. But if you know you want to be a PM someday (I didn't) then it's even easier to look for that kind of exposure in consulting. Lots of PMs are ex-consulting and in their late 20s / early 30s when starting out.
If I want to make it in product one day am I just taking a longer and more difficult route going through McKinsey first? 30 yrs old and considering WLB etc. I don’t see myself staying in McKinsey more than 2 yrs... so I’m wondering if it will it even pay off in any way

Do McK for two years. Will be great, nice learning curve, and you get 40% more comp. And in two years find a cool start up that pays accordingly and is in an interesting stage.
I mean. It the start up the one with 40% comp?
Do you believe in or care about the startup? What series of funding are they on? I'm leaning twd McKinsey if it is a random startup, but if it is an impressive unicorn or unicorn track startup, it could be much better.
Oof that’s a big gap. If you plan on staying in tech and in product, maybe take the fintech. I’d personally take McKinsey here any day of the week though.
Go for PM role!
Do what you feel is better for you, because this sets the track for the future progression.
PM-> Consulting easier than Consulting->PM
