Go for it. Don't even question it.
If you get the gig and need to leave your current job, be nice about it. Explain what you explained to us. Apologize and explain this was unexpected. Be compassionate. And respectful. And honest (to a point).
Will you burn a bridge? It's possible. They won't be happy about it. It's not ideal. But if they're nice and you're nice, it probably won't be permanent.

You can always phrase it as “an opportunity I can’t say no to was presented to me.” Rather than “dream job”
If your current place turns out to be a kind of company that “burns bridges” then you won’t want to stay there anyway. Congratulations on new role !

I'd be honest with your current employer. It's still early so they probably have a backup candidate. I would say before leaving do a quick check on "the dream job" before jumping. Make sure the reality and the dream sync up, because if not you'll be looking again. BUT if the dream job is all its cracked up to be and you handle the exit professionally, you'll be ok

I want to pile on with the go for it mentally but I don’t see myself having the guts to actually follow through if it were me.
