The new company I’m at now sent me an email from an email address that was HR@companyName.careers saying I was accepted for the position. They gave me paperwork to fill out and sign to accept the position

Unfortunately no, as my work requires hybrid presence so I have to be in the office 2-3 times a week :(
If you’re that miserable and it’s effecting your mental health, then yes leave but in the short term I’d start by taking some decent time off to regroup and rest.
Think about what you want to do while you’re away from work. If it’s manageable to stay then create a plan for finding a new job (contacting recruiters, people in your network, list of companies etc) and if it’s not, then determine if will you be okay financially to quit and for how long and then leave.
You have to put yourself first always.
This is a really tough spot to be in and I’m sorry you are going through it. The what if’s are always scary, and I struggle with that too, so I’m not the best with advice on how to work through them. I just learned to trust myself but that is a work in progress as well. I think baby steps would be at least a couple days off just to rest.
Apply for 20 jobs. I know, it’s hard, but do it. Try and line up two interviews.
Put in for PTO for a week. The week prior to PTO you work Monday, work from home Tues and Weds, call out sick Thursday and Friday.
Try and have one of the interviews on your the Thursday and Friday. Obviously, interviews can’t necessarily be planned, but take control when possible.
I actually applied for 10 jobs and had 3 hiring teams reach out, and it’s one of the reasons why I’m thinking I’d like to just quit. It’s exhausting balancing both full time work and job hunting!
