I’ve had friends get married on weekdays. Everyone just takes the day off work to attend. Is it annoying? Yes. Are you passing your cost along to your guests? Yes. Will some people feel resentment? Yes. Will everyone deal with it and still come and remain your friend and have a great day? Also yes.
Planned a few Sunday weddings and the common theme they had was starting earlier than you usual Saturday weddings. So think more of a day party than night party
I’ve been to a few Sunday weddings and they have been largely fun. The party tends to wind down sooner so if you can, I would suggest an earlier start time to avoid guests calling it an early night. I was invited to one Friday wedding and had to decline because I couldn’t take the time off to get there. I would have had to also take Thursday off to travel.
My friend got married on a Friday because her venue went bankrupt and close and her new venue only had Friday dates. It was fine. I wasn’t local and was in the wedding, so I had to take off Thursday and Friday. Most people were local though and probably only had to take off work a few hours early on Friday. I liked it over a Sunday wedding (which I’ve also been to), because I could travel home on Saturday and still have a day to catch up before going back to work on Monday. Like others have said, we left the Sunday wedding before dancing really got going because we wanted to get home before it got too late (the wedding was about an hour from our house).

You have identified why they charge more for Saturday. Of the two, if most of your guests are local I would opt for a later start time Friday wedding

and there are typically only 50 Saturdays a year available. Logistically everyone can't have a Sat afternoon/evening wedding, even if cost were the same.
