Leave. Service life will drain you dry if you let it. Go build something that lasts and pay your rent without back pain.
Think of it this way: you can always go back to doing what you're doing. There will never be a time when there is no need for kitchen staff. But you could try something new and fall in love with it. Either way, I'm always an advocate for challenging yourself.
Another thought along the same idea. You have more choices between the binary stay-or-go. Once you have a new offer lined up, consider not quitting the old job, but changing your availability for several weeks while you try out the new place. That will help you feel whether the buzz of service is still something that recharges you, or if it just feels draining.
I think it sounds like your body needs recovery, so thinking about a switch isn’t a bad idea. That being said, since you’re a sous chef, does that mean you’re close to being a head chef? Going into management will help you get out of the daily grind and more into the creative side of things…
