I have exactly the same thing happening to me as you in my current job, it is so exhausting that all the time I think about quitting but when I take a break I go back to doing my job the same way.
It seems to me a lack of respect from your boss, we all have our activities defined and we must fulfill the objective that corresponds to us but it is not justified that for being a responsible person they assign you more work.
A good leader knows that it is not good to overload a person, no matter how good and responsible he or she may be. To maintain the balance in the company you must hire people who meet their objectives and not overload any one person. I recommend you to talk to your boss and tell him/her that you don't feel comfortable.
Mental health >> Money. Stress ages you badly. Deteriorates your personal life. Your manager/boss is responsible to make it less stressful for you. It is his job. Period. But have you spoken to him? If he doesn't know, he can't act. Tell your boss and see his reaction. If he doesn't seem to care. He is another toxic manager bred in the corporate culture. It's time for you to move on.
