In a ethical/decent world what is the recruiting/hiring process like?

I was in photo school until 2022 & upon graduation i started freelancing/working under an independent photographer. Other than internships i dont have experience working under a company with a consistent salary. Prior to what seems like hell (2024) - what is the typical process for hiring/ recruiting + interviewing process? I guess ethically what is it supposed to look like? I just need to compare my experiences to something

I just got a job offer for an Entry Level Software Engineer at Boeing in Saint Louis. The salary is $82,000 with an $8,000 sign on bonus. I was hoping for an offer closer to 90k base and I don’t care too much for a sign on bonus. However, this is a lot more than what I’m making now, and would be my first SWE job. Should I counter? If so, how would I go about doing that? Thanks!

After rejecting big companies like Infosys,Wipro, etc. I've joined EPAM Anywhere due to wfh permanently and it's perks. But after spending 1 and half month HR called me to search the opportunity outside of EPAM, means they're laying off people. It's unfair behaviour of the organisation.
